Our History

Follow our journey from 1983, when the first inspiration was found, until today.

1983

The inspiration begins

Niels Monberg and Tim Vollerslev win Sopexa’s Danish competition “Knowledge of French Wine & Spirits” and travel to the ASI World Championship (Mondial du Vin) in Brussels.

They don’t win, but meet world-class sommeliers from top restaurants, sparking the idea of a Danish association.

1985

First ASI role for Denmark

Tim Vollerslev gets invited by Association de la Sommellerie Internationale (ASI) to represent Denmark as a judge at international and national sommelier championships.

1980s

The Little Mermaid era

On ASI travels, the founder admires the national emblems worn by sommeliers from other countries (France’s golden grape cluster, Italy’s golden tastevin, etc.).

In Denmark, no official emblem exists, so a Little Mermaid pin from the hotel kiosk becomes the unofficial DSF symbol.

At the next ASI championship, the mermaid is a hit and highly sought after in trades with other sommeliers.

1989

Dansk Sommelier Forening is founded

After nearly six years of preparation, DSF is officially established by a group of passionate hospitality professionals, including Niels Monberg and Søren Hansen.

1990

The Golden Corkscrew emblem

Realising the Little Mermaid didn’t truly represent wine, Tim designed a golden waiter’s corkscrew, unique among ASI member countries.

He placed his own corkscrew on a copy machine and faxed the design to suppliers to have it produced.

Today, the golden emblem is reserved exclusively for DSF members working in hospitality who have proven their drinks knowledge.

A silver version is reserved for DSF sponsors.

2000–2020

Growth and recognition

DSF continues to represent Denmark internationally through ASI, run national championships, and offer training, tastings, and networking for the hospitality industry.

Sponsors remain vital for funding education, events, and travel.

2025

A thriving community

DSF has grown to more than 160 members and is part of a global network of over 70 ASI member countries.

The association plays a key role in maintaining high standards in the Danish hospitality industry and promoting wine culture in Denmark and abroad.
